As a Demeter-certified estate and winery, our winemaking is rooted in a commitment to purity and authenticity at every stage. We ferment exclusively with native yeasts naturally present on our grapes and in our cellar, allowing the true character of our vineyard to shine through without commercial intervention. We do not use acidification, chaptalization, or tannin adjustments-preserving the integrity of each vintage and expressing our unique sense of place.

Demeter’s rigorous standards ensure that our wines are crafted with minimal manipulation, prioritizing physical methods over chemical ones and limiting additives to what is essential for quality and stability. This approach protects the natural integrity of our wines and guarantees that what’s in your glass is a genuine reflection of our land and our farming philosophy.

While Pinot Noir is at the heart of what we do, we love exploring a range of cool-climate grapes from France, Italy, Germany, and Austria. Our vineyard is home to:

  • French varieties: Pinot Noir, Chardonnay, Pinot Gris, Savagnin, Gamay, Cabernet Franc, Melon de Bourgogne, Mondeuse

  • Austrian varieties: Grüner Veltliner, Blaufränkisch, Zweigelt

  • Italian varieties: Ribolla Gialla, Friulano

  • German variety: Kerner
